Restaurant Air Pollution Risks

A US study has found that restaurant and hospitality workers may be exposed to elevated levels of indoor air pollution, particularly in kitchens that use gas-powered cooking equipment.

Researchers measured air pollution in 27 kitchens and found that nitrogen dioxide concentrations in 17 exceeded World Health Organization air quality guidelines. The study also identified elevated pollution levels in some dining areas.

Electric kitchens recorded the lowest pollution levels and lower temperatures, suggesting potential benefits for workers' comfort and indoor air quality.

Researchers also detected elevated pollution during nighttime and early morning hours in some gas-powered kitchens, even when cooking equipment was switched off. Continuously burning ignition flames were identified as a possible source of these emissions.

Experts recommend effective ventilation, properly maintained exhaust hoods, regular filter cleaning, appropriate cooking temperatures, and routine inspection of gas equipment to help reduce exposure to cooking-related pollutants.
